Toss-Your-Garlic Tomato Sauce
This two-ingredient (not including oil and salt), 15-minute tomato sauce requires a can opener but no knifework and is super easy to make. It mirrors the technique used by the many Italian home cooks and chefs with whom we’ve spent time in the kitchen. The recipe yields enough sauce to coat 1 pound of pasta. Do as the Italians do and add the drained pasta directly to the sauce in the skillet and toss for a minute or so to marry the elements.

medium garlic cloves, smashed and peeled
Directions

01In a 12-inch skillet over medium-high, combine 3 tablespoons oil and the garlic. Cook, stirring, until the garlic is golden brown, 2 to 3 minutes. Remove and discard the cloves or reserve for another use. Add the tomato juices to the pan. Bring to a simmer and cook, stirring often, until thick enough that a spatula drawn through the mixture leaves a trail, 4 to 5 minutes.
